Gluten-Free Peach Cobbler
This Peach Cobbler turned out so dang good!! I'm thinking of making a bunch of these to have on hand in the freezer. Peaches are in season, grab them while they are. You won't regret it!
Peach Filling Ingredients:
- 5–6 large fresh peaches, peeled and sliced
- 1/4 cup sugar
Cobbler Topping:
- 1/2 cup salted butter, slightly softened ( use @earthbalance for dairy-free option)
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla
- 1 cup @cup4cup gluten-free flour
- 1 teaspoon baking powder
- We use Tillamook vanilla ice cream for serving (or use @so_delicious for dairy-free)
Instructions:
- Preheat the oven to 350°F.
- Slice peaches and add peaches and 1/4 cup sugar to 9 x 13 pan.
- Mix the butter, sugar, vanilla, flour, and baking powder until a crumbly texture
- Place the mixture over the top of the peaches.
- Bake for 30 minutes. At this point, it should be juicy and bubbly around the sides.
- Sprinkle the top with a little brown sugar. And bake another 10 minutes and then finish with a few minutes under the broiler to get it golden brown.
- To get a thick saucy peach base, let it stand for 10-15 minutes before serving with some vanilla ice cream.
