Mini Meatloaf with Steamed Veggies

Ingredients:

  • 1lb lean grass-fed ground beef
  • 1/2 onion, chopped
  • 2 egg whites
  • 1/2 cup gluten-free quick oats
  • 1/4 cup ketchup
  • 1/4 cup no-salt tomato sauce
  • Salt, pepper, and garlic powder to taste
Instructions:
  1. Spray muffin tin with nonstick spray.
  2. Mix all ingredients for meat, then ball up.
  3. Bake at 400°F for 35-40 minutes or until meat is cooked.
