Hawaiian BBQ Bowls

Ingredients:
- 2 tbsp Avocado oil
- 1 lb Boneless skinless chicken breasts
- Salt and pepper
- 2 Bell peppers (1 yellow and 1 red)
- 1 Red onion
- 1 Fresh pineapple
- 2/3 cup Stubbs BBQ sauce
- Cook chicken in instant pot for 6 minutes on high pressure, manual setting. When done transfer chicken to cutting board and cut into bite-size pieces. While chicken is cooking chop up veggies and pineapple into bite-size pieces.
- Add 1 tablespoon of oil to sauté pan. Add peppers and onion, and sauté for 3 minutes, stirring occasionally. Add the cooked chicken and BBQ sauce to the sauté pan with the veggies and toss everything until combined. Serve over rice or quinoa.
