Gluten-Free Kodiak Pumpkin Muffins

Kodiak Pumpkin Muffins

Ingredients:

  • 2 cups Kodiak mix
  • 1 cup milk
  • 3/4 cup brown sugar
  • 1 egg
  • 1/4 cup butter (I used grass-fed Kerry gold)
  • 3/4 cup organic pumpkin purée
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/2 cup chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F

  2. Combine all ingredients together.
  3. Fill muffin tins 3/4 of the way full.
  4. Bake for 14-18 minutes.
  5. Enjoy!

Note: You can also substitute regular Kodiak Mix to make this recipe as well if you aren't gluten-free.
