Gluten-Free Cowboy Quesadillas

Cowboy Quesadillas


  • 1 cup Cooked rice
  • 1/3 cup Black beans
  • 2 cups Cooked chicken, diced
  • 1/3 cup Frozen corn
  • 2/3 cup Diced tomatoes
  • 3 tbsp sliced green onion
  • 1 1/2-2 cups Shredded cheese (Use @Violife cheese for Dairy-free option)
  • 1/4 cup BBQ sauce (I use @stubbsbbqsauce)
  • 6 tortillas (I use @sietefoods for gluten-free) 

Dipping Sauce:

Equal parts BBQ sauce and ranch dressing. 1/4 cup of each. Stir until well combined.


  1. Combine cooked rice, beans, chicken, corn, tomatoes, green onions, and shredded cheese.
  2. Add BBQ sauce and stir to combine all.
  3. Place about a 1/3 cup of mixture on the tortilla and add another tortilla on top.
  4. Heat skillet to medium heat on the stove top. When hot spray lightly with cooking spray.
  5. Place quesadillas on the skillet and on each side for 2-4 minutes or until golden brown and slightly crispy.
  6. Enjoy!
