Coconut Curry

Coconut Chicken Curry

 

Ingredients:
  • 1 can coconut milk
  • 1 green pepper
  • 1 tablespoon curry powder
  • 1 can tomato paste
  • 2 garlic cloves
  • 2 chicken breasts
Instructions:
  1. In Blendtec, combine coconut milk, peppers, tomato paste, garlic, and curry powder. And blend to make the sauce. Add chicken breasts and sauce to the freezer bag.
  2. When ready to use pull out of the freezer and add to the crock pot. Cook on low for 4-6 hours.
  3. When cooked, shred or cut the chicken into bite-size pieces. Serve with rice or pad Thai noodles.
