Coconut Chicken Curry
Ingredients:
- 1 can coconut milk
- 1 green pepper
- 1 tablespoon curry powder
- 1 can tomato paste
- 2 garlic cloves
- 2 chicken breasts
- In Blendtec, combine coconut milk, peppers, tomato paste, garlic, and curry powder. And blend to make the sauce. Add chicken breasts and sauce to the freezer bag.
- When ready to use pull out of the freezer and add to the crock pot. Cook on low for 4-6 hours.
- When cooked, shred or cut the chicken into bite-size pieces. Serve with rice or pad Thai noodles.
