Coconut Crispy PB Energy Bites

Ingredients:

  • 2 cups gluten free old fashion oats
  • 1/2 cup coconut, shredded
  • 1/2 cup ground Flaxseed
  • 1 cup rice crispy cereal (I use Malt O Meal brand for Gluten Free)
  • 1 cup Peanut Butter of favorite nut butter
  • 1/2 cup honey
  • 1/4 cup pure maple syrup
  • 1/2 cup mixture of choice we love using mini m&ms or mini chocolate chips.
  • 1 scoop plain or vanilla protein powder (Optional)
Instructions:
  1. In a blender add half of the rolled oats and pulse for a few seconds.
  2. In a mixing bowl or Bosch mixer/Kitchen Aid combine all ingredients and mix until well combined.
  3. Roll into the size balls you prefer. We make some smaller and some bigger. You can also use a cookie scoop to form them.
  4. Enjoy!!
